Cooking for our families is tricky. You can easily become a short-order cook meeting everyone's preferences while also flying by the seat of your pants every day coming up with fresh ideas. Solid meal planning skills can take you from dreading the kitchen to having easy and healthy options to grab for any meal of the day. This doesn’t require gourmet culinary mastery. We aren’t even talking about making everything from scratch! Through-out the workshop we will cover:

  • How and what to prep in advance for easy weekday meals;
  • How to build a pantry of valuable everyday basics;
  • How to shop for the right mix of fresh produce that will keep;
  • How to make the best use of your time in the kitchen.
  • You will also receive copies of tasty, meal planning-friendly recipes.

We will also examine:

  • What kind of eater are you? What kinds of eaters do you feed?
  • How does how you like to eat translate into how you need to meal plan?
  • How much time you really have to shop, prep, and cook?
  • The number of recipes you need for each week to cover all the bases?

Led by: Nancy Campbell, M.S., Culinary Nutritionist

Nancy is a mother to a 5 year old and a culinary nutritionist. combines her training in nutrition and integrative health, a Masters of Urban Planning and over a decade of professional culinary experience in Radiant Health. She supports her clients to redefine how they eat and their relationship to food. She guides them to build culinary skills, and fine-tune their pantries so they can feel amazing in their skin AND in the kitchen.

Having made her own dietary transition over the course of the last nine years, she knows what it's like to not have the time or patience to spend hours in the kitchen AND still want amazing food every night. So, with a low budget, simple recipes, and a vegetarian tendency, she took her years of prepping in professional kitchens into her own home. The result has led her to support others to discover and refine their empowerment in the kitchen, in their bodies and in their lives.

Nancy received her Masters of Science of Nutrition and Integrated Health at the Maryland University of Integrative Health and her Masters of City and Regional Planning from Pratt Institute.

Look. I am a chef. I am comfortable in the kitchen, and there are nights that we eat frozen meals from Trader Joe's. It's called life! We don't have to master meal planning with charts, graphs, and pie charts. We just need to put organized thought into what's for dinner!
