Havarti is a semi-soft cow’s-milk cheese created in the mid-1800s in Denmark. In this class you will make a wheel of Havarti to take home and age.

Due to limited space, this is a prepaid event, no tickets will be sold at the door.

Making Havarti is great for intermediate cheese makers, but if you are a beginner you will catch on quickly. We will be making a wheel of cheese and taking it home to age. It is simple to make and what is unique about this aged cheese is that it uses a hot washed curd process to give it that creamy texture. Havarti can be ready to eat as early as 1 month. The finished cheese has a gentle and mild flavor with a slightly soft texture.

This is a hands on cheese making class where we will start with milk and finesse it into a wheel of Havarti cheese for each one in class to take home and age. Since Havarti is often found flavored with dill and other herbs, we will learn how to add these herbs to our cheese. We will be going over how to mold your cheese, how to dry it and get it ready to wax. You will be learning what milk to use, what cultures are used for in cheese making and what the enzyme rennet’s’ job is while making cheese.

During your experience in this class, you will learn simple techniques in cheese making that you will always use. Not only is this class fun, you will walk away with the desire to learn more about making home-made cheeses. You will leave the class with your own copies of the recipe of the cheese we make and the knowledge to make your own cheese at home plus your own wheel of Havarti to age. Food and wine are available for purchase at this venue.
