If the phrase “homemade puff pastry” gives you nightmares of greasy butter, never-ending rolling and a wrecked kitchen, you’re not alone. Thankfully, Kristen Suzuki from King Arthur Baking Co. is here to make the impossible possible. We’ll start by reviewing correct techniques for accurate measurement in baking, which is especially critical for recipes that rely on specific ratios. We’ll talk about the importance of cold butter, which creates the characteristic layers and flakiness that you want from perfect puff pastry. Then, you’ll learn how to execute professional “turns,” which create elongated panes of butter to maximize your flakiness. Kristen will share insights on how to time your puff pastry production and how to make it ahead in batches for future use. Then, we’ll roll out and cut various shapes with your homemade puff pastry and transform them into one sweet and one savory dish. And if you’re not afraid of puff pastry? Join us anyway: you’re sure to learn something new along the way.

About your instructor: A California native, Kristen Suzuki started working at the Washington State King Arthur location in 2018. She attended California Culinary Academy in San Francisco for Baking and Pastry. She spent time baking for hotels before transitioning to a teaching position at King Arthur Flour and has since relocated to the Vermont school.

Immediately after registering, you will get a confirmation email that contains the Zoom meeting log-in information. One week prior to class (or within 48 hours of registering, if you sign up less than a week in advance), you will receive an email with the ingredients, equipment and prep you'll need to cook along with us, if you choose.

After class, you will receive a recording of the event, as well as a folder of recipes and resources that we discuss during the event. Class recordings are available to all registered attendees for two weeks following each event.

Payments for Milk Street live stream classes are non-refundable. If you find yourself unable to attend, you may transfer the ticket to someone else, but we are unable to refund fees and all payments are final. Classes are subject to cancellation at any time. In the case of cancellation by the event organizer, all paid tickets will be fully refunded.
